Recipe of the Week Bacon Egg and Cheese Oats – by our own Chef Tim Recher

Triathletes love to eat!  No argument there.

Here he shares one of his favourite pre-workout meals.

370 calories, 29g carbs, 18g fat, 26g protein.

 

 

Bacon, Egg, & Cheese Oats:
-1/2 cup rolled oats
-1 cup water (or to your liking)
-1 pieces uncured all natural turkey bacon (chopped)
-1 Tbs reduced fat shredded sharp cheddar
-2 eggs, poached (I use high omega 3 eggs)
-1 scallion, sliced
-Sriracha, Salt, & Pepper to taste

1) mix bacon and oats with water and microwave for 1 minute, give or take based on what yo like
2) stir in salt, pepper, hot sauce, and cheese until combined
3) top with eggs, scallions, and reseason

**this fits the nutrion I am following but you can adjust it as needed, i.e. steel cut oats (if you have more time then I do in the morning!), egg whites, regular bacon, other cheese (goat cheese works great!) quinoia, as much hot sauce as you like
*I also though about stiring in a handful of pesto & baby spinach for a Green Eggs & Ham kind of thing
