Recipe of the Week – Kona Inspired Snack

Tuna Poke “Sushi”

4 oz raw ahi tuna, cut into small cubes
1/2 tsp sesame oil
1/2 tsp sambal (chili garlic paste)
1 Tbs low sodium soy
1 scallion, minced very small
1 macadamia nut, grated with a micro plane
1/2 tsp fresh lemon zest
pinch of Hawaiian Sea Salt (I still have a little bit left from my trip!
1/3 of a seedless cucumber sliced thin lengthwise on a mandolin

Mix up the tuna with all the seasonings in a small bowl
then just roll it up in the cucumber to make sushi style rolls
*if you want them to stay that way, you will need to use a toothpick
sometimes I just use slices of cucumber to dip into the poke mix
