Recipe of the Week – Steak, Egg and Cheese Breakfast Burrito

Steak Egg & Cheese Breakfast Burrito

makes 2 (save one for a reheat later in the week and sleep a few extra minutes!
-2 whole wheat tortillas
(I used La Tortilla Factory Low Carb Whole Wheat)
-1/2 onion, diced
-1/2 zucchini, diced
-3 seconds Pan release spray
-1 cup egg whites
-2 Tbs reduced fat sharp cheddar, shredded
-4 oz leftover steak, sliced
-Salt & Pepper to taste
-Hot Sauce to taste
-2 Tbs Salsa for serving (optional)

1) Using a non stick pan, saute the onions & zucchini in the pan spray

2) add the steak, toss and then pour in the egg whites

3) allow to set for 30 seconds and then scramble

4) season with salt, pepper, and hot sauce if using

5) turn off heat and allow to cool for a minute

6) warm up the tortillas for a few seconds in the microwave so they roll easier

7) roll up the eggs in the tortilla with half of the cheese in each one

8) wrap one up for later

*i like to use the same non stick pan with another second of spray to brown off the outside on the tortilla. It gives it a little crunch and only takes about 30 seconds per side

Serve with the salsa
